More Greens Please!

I’ve been trying to do something different, out of my norm…. and that is to eat more VEGETABLES.

I know, I know… it sounds funny however, like many other people, I have a hard time eating greens if it’s not cooked a certain way, look a certain way, and the truth is I probably just don’t want to. It’s easier to go and grab a burger on the way home, eat instant noodles and fried eggs, or if I’m cooking at home, I
probably will add a bell pepper or some cilantro or green onions but that’s still not enough greens! I don’t want a salad every day and I probably will put too much dressing on it.

But two weeks ago I bought myself a small personal blender and have been making some surprisingly yummy smoothies, containing more vegetables than I ever thought I’d eat in a day! Though I haven’t seen what it’s doing to my body, I can feel what it’s doing to my body! You know the feeling where after a meal, you feel sluggish and bloated and probably know that you ate too much of those curly cheese fries or the grease on those hushpuppies were “on point”? (side note: I don’t eat curly cheese fries or hushpuppies but I do like carbs).

After many tummy aches and trying to figure out how I can better my eating habits, I decided to look into other alternatives to eating vegetables and fruits. So long feelings of sluggish and bloated after a meal! If you don’t like to eat vegetables, maybe drinking it will help your vegetable/fruit intake!

My favorite recipe so far (no ice added): (only 4 servings)

2  cups of baby spinach
1 cup of baby carrots
1 medium size banana
½ cup of plain Greek yogurt
¼ cup of unsweetened almond milk

Other ingredients that I have tried:

  • Frozen fruits (love it but trying to stick to the fresh fruits)
  • Avocado (No Bueno! Though the flavor was not overpowering but made my drink thick. Not my personal favorite)
  • Cucumber (Yum! Clean, refreshing taste)
  • Fresh Blueberries (Love it!)
  • Flavored yogurt (Love it for the flavor but too much sugar)

Another important benefit of eating healthier, or drinking healthier, it also makes you feel physically and mentally better! When you eat health, you have the energy to think clearly, be motivated, and feel good mentally and physically about yourself. Eating a better diet will not only bring you physical benefits but emotional and mental benefits.

I usually drink my smoothie for breakfast. It helps start off my day and I can get it out of the way. Hopefully the longer I continue to drink a smoothie a day, I’ll come to love it and take it up to two smoothies a day! It has been a delicious process. Even though right now I can’t see the difference, I am already feeling the benefits of it! Send me some of your favorite veg/fruit smoothie recipes! I’m mainly stuck on spinach because I like the taste and probably because my other alternative is kale and it’s too bitter for my liking. I might began trying romaine lettuce and spring mix next time.
